Vegan Chocolate Chip Cookies

     It’s Juliana_Banana here with an awesome new recipe coming your way! Recently I have been on a crazy chocolate kick. Some would say I’m a “choco-holic”, but I like the description “chocolate lover” better, even though those people don’t go through a bag of chocolate chips and a container of cacao in four days, like I do. Anyways, I recently have had some crazy cravings for sweets. I think this is something we are all familiar with, and there is nothing more satisfying than the taste of a warm, gooey, chocolate filled cookie to kick those cravings to the curb. Although some people can stick to just one cookie and call it a day, I need about three or four. (eating one as we speak). Lets also not forget about the four I had yesterday, and that doesn’t count the left over cookie dough I was spooning out of the bowl. 

     Although I have been craving sweets and have been following what my body wants, I have also been more aware of the amount of sugar I have been consuming in order to help my body. I have been reading more about the importance of hormonal balance and the importance of a proper diet that supports your body in the ways that it needs in order for it to function properly. I have been trying out many different cookie recipes lately to try and find one that satisfies my sweet tooth but also satisfies my body and it has been quite the experiment. Some cookies fell apart the first few times, some were too dry, some were so bad that I couldn’t bare to swallow a single bite, but through this trial and error I have come to find the most wonderful chocolate chip cookie recipe that tastes amazing and is also so much better for you than the average sugar-filled cookie that fills our supermarket’s shelves these days. These cookies are vegan, gluten free, refined sugar free, full of healthy hormone friendly fats, and have simple ingredients that you might already be able to find in your pantry at home!

For this simple recipe you will need:

-1 cup of gluten free oat flour

-1 cup of gluten free coconut flour

-1/4 cup of coconut butter (melted)

-1/4 cup of coconut oil (melted)

-4 tablespoons of coconut nectar

-1/2 cup of vegan chocolate chips

-2 flax eggs

-1/2 teaspoon of baking powder

-1/2 teaspoon of baking soda

-1/2 teaspoon of sea salt

-First, I start out by filling a small bowl with 2 tablespoons of ground flax meal, and 6 tablespoons of water. I Mix the two together and let it sit for about ten minutes to form a thick egg-like consistency. Next, I grab a large mixing bowl and add my dry ingredients (oat flour, coconut flour, baking powder, baking soda, and sea salt). I slowly stir these ingredients together until they are well mixed and ready to go. 

-I then grab a small pan, and fill it with ¼ cup of coconut butter, and a ¼ cup of coconut oil. I turn the heat on low and let it slowly melt in to a thick creamy consistency. Once the coconut butter and oil is melted, I add in the 4 tablespoons of coconut nectar (you can add more if you’d like it sweeter), and stir it in to the heated mixture. Once all the ingredients are mixed, I set it aside to let it cool for a few minutes.

-Once the wet ingredients have cooled, I pour them in to the large bowl with the dry ingredients, and also add in the flax egg. I mix all of the ingredients until it forms a dough-like consistency. Once the dough is formed, I pour in the vegan chocolate chips and mix it well.

-Once the dough is completely ready, I heat the oven up to 350 degrees. I grab a large baking sheet and cover it with parchment paper. I then take a small scoop of the cookie dough, roll it in to a ball, and then press it down on the parchment paper to form a cookie that is about 2 inches wide (you can make them larger if you’d like, this works best for me).

-Once all the cookies are formed, I place them in the oven and bake them for 8-10 minutes depending on how soft I want them. I pull them out of the oven and let them cool for about 15 minutes. Once they have cooled they are ready to share (or not to share depending on how bad you were craving those cookies)! I hope that you enjoy these cookies as much as I do!
