Turkey Picadillo

Serves:  4-6

Picadillo is a popular Latin American dish that is usually made from beef.  My turkey version is lighter and packed with tons of colorful veggies.  You can stuff in peppers, taco shells, burritos, use as a filling for empanadas, or serve with rice or potatoes.  Don’t let the long list of ingredients scare you!  It will be worth it, I promise you!  This dish freezes well so consider making a double batch!

2 Tbsp. olive oil

1 pound lean ground turkey

1 medium red onion, diced

3 celery stalks, chopped

1 medium red pepper, seeded and chopped

½ medium green pepper, seeded and chopped

1 medium jalapeno, seeded and minced

2 tsp. dried oregano

1 teaspoon cumin

¼ tsp. red pepper flakes

1 ½ tsp. paprika

1 ½ tsp. garlic, minced

¼ cup tomato paste

1/3 cup cider vinegar

¼ cup golden raisins

¼ cup capers, drained

*salt to taste

1.      Heat olive oil over medium heat in a large skillet.

2.     Add the ground turkey, breaking up meat as it cooks until browned.  Drain off and discard any excess fat.

3.     Add the onions, celery, red and green peppers, oregano, cumin, red pepper flakes, paprika, garlic, tomato paste, vinegar.  Cook for 5 minutes, stirring often.

4.     Add the raisins and capers. Simmer for 30 minutes, stirring occasionally.
