The Fresh Chef – Baked Honey Mustard Chicken Tenders

Everyone loves chicken tenders!  Adults and especially children enjoy the flavors, crunch and tastiness of these family favorites.  However, in the traditional recipes, they are coated with white flour and deep fried.  As the Fresh Chef, I specialize in making the “Best Makeovers” of your favorite comfort foods.   My version is baked, instead of fried, which saves you hundreds of calories and is much easier to digest.  One of the best ways to prevent heart disease is to cut back on fried foods!  Try my tasty, crunchy treats and no one will know the difference.  They are highly seasoned and your family and friends will love them.

Baked Honey Mustard Chicken Tenders

Ingredients:

  • 1 tablespoon olive oil
  • 6 tablespoons honey
  • 1/4 cup Dijon mustard
  • 1/2 teaspoon paprika
  • 2 tablespoons of water
  • 1/4 cup of rice flour
  • 1 1/2 cups panko/breadcrumbs
  • 1 tablespoon chopped fresh parsley
  • 12 chicken breast tenders
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Mrs. Dash Original Herbs and Spices

 

Instructions:

 

1.Prevent oven to 450 degrees

2. Spread olive oil in bottom of a glass baking dish

3. Combine honey, mustard, and paprika in a shallow bowl and stir well. Remove half of honey mixture in a small bowl to use as a dipping sauce.  Stir 2 tablespoons water into remaining honey mixture to thin.

4. Place rice flour in a shallow bowl. And place the panko/bread crumbs and parsley in another bowl.

5. Wash, dry, and then season chicken tenders with the seasonings listed above. Dredge chicken in flour, shaking off excess; dip into thinned honey mixture.  Now, dredge in in panko mixture, and place on oiled glass baking dish.

6. Bake at 450 degrees for 15 minutes.  Turn chicken over, cook an additional 10 minutes (or until lightly browned).  Serve tenders with prepared honey mustard dipping sauce.
