The Fresh Chef – Anti-Cancer Diet

“YOU ARE WHAT YOU EAT” may be cliché, but it’s true.  What you eat will affect how you feel, how you look and ultimately how healthy or unhealthy your body will become.  When I was younger, I could eat whatever I wanted without consequence.  My dad often called me “thin as a rail” and I was always full of energy.  That changed after I turned 30.  I had a baby, gained weight and I could not get it off.  I was 30 pounds overweight and often exhausted.  I tried dozens of diets, but nothing seemed to help me get back to a healthy weight.  The crash diets would help me lose weight temporarily, but when I went back to my regular eating, then quickly gain it back.  Conflicting information in books and on TV made it difficult to know what to believe.


I finally decided to nix crash dieting and commit to learning about eating natural foods as a way of life.  I enrolled in a holistic nutrition school and learned how to use food as medicine to heal disease, shed unwanted body fat, detox my colon and increase my energy.  I gave up processed foods that were leading to disease and slowly killing me, and replaced them with high nutrient foods to build my strength and renew my life.  After about two years, my weight had returned to normal, regained my health and energy and got my life back on track.

The main causes of disease are: unhealthy eating habits, lack of exercise, emotional stress and toxic overload.  The Standard American Diet (SAD) is a major cause for obesity and many diseases in the United States.  Most Americans eat too much fast food and overly processed foods loaded with trans fat, salt, sugar, artificial ingredients and preservatives.   During my studies on healthy eating I discovered the most amazing, life saving information about how to avoid or decrease your chances of getting cancer and avoiding most diseases.

A group of naturopathic doctors did an experiment where they dripped the juices of vegetables and fruit on cancer cells and tumors to see what would happen.  As they had expected, some of the vegetable and fruit juices ACTUALLY SHRUNK THE CANCER CELLS AND TUMORS!  I try to eat these foods on a daily basis.  Here is the list of the top ten.




2-Leafy Greens/Spinach/Kale


4-Broccoli /Cauliflower/Brussels Sprouts

5-Turmeric/ Ginger/ Thyme/ Parsley/ Oregano/ Cayenne Pepper




9-Bell Peppers (orange, red, yellow and green)

10-Green Tea


Please note that ALL vegetables are good for you, especially the green ones!  Each Vegetable and Fruit that you eat has different health benefits for the body in some capacity.  I try to eat a lot of vegetables every day.  They are low in calories, high in fiber, vitamins and minerals and have tremendous health benefits. Almost every day I eat “The Giant Anti-Cancer Salad” for lunch, created by my friend Chris. (  I encourage you to try it.  It is delicious, crunchy and it will definitely increase your energy!



2 cups of leafy Greens (Kale, Romaine, Spring Mix and/or Spinach)

1/4 cup chopped broccoli/cauliflower

1/4 cup chopped purple cabbage

1/4 cup zucchini/squash

1 tablespoon chopped onion

1/4 cup red, yellow and orange bell peppers

1/4 cups Sprouts (alfalfa or broccoli)

1/4 cup beans (black, red, etc…)

1/2 avocado

1/4 cup seeds or nuts (protein)

Serve with Bubbies Sauerkraut (contains millions of probiotics) great for a healthy colon and gut


Homemade Italian Dressing

1 tablespoon Olive Oil

2 tablespoons Braggs Organic Apple Cider Vinegar

1/2 teaspoon of each spice:

Oregano (or Italian Herb Blend)

Chopped Fresh Garlic (or garlic powder)

Turmeric Powder

Cayenne Pepper

Black Pepper

Ginger Powder


I usually choose “Mary’s Gone Crackers” as a side dish.  These crackers are gluten free and high in protein and fiber.  They are made with Quinoa, Brown Rice and Flax Seeds.
