Banana Berry Pancakes

Happy fall you guys! I am so excited we have reached the ultimate comfort food season. Breakfast is my favorite meal of the day, and sometimes tends to make an appearance at dinner as well. Warm cinnamon oatmeal, pumpkin spice muffins, and stacks of berry banana pancakes are the first items that come to mind when I think of sitting down to a warm breakfast with my matcha latte in hand. One of my favorite meals to create though are my banana berry pancakes. They are made with just five ingredients! These pancakes are sweet, fluffy, and oh so delicious! They are incredibly easy to make, and are super healthy! They are also gluten free, refined sugar free, and low fat! To make these banana pancakes all you will need is:

-1 banana
-1 cup of nut milk (I use Forager vanilla cashew milk)
-1 cup of gluten free rolled oats
-2 tablespoons of ground flax seed
-1-2 tablespoons of pure maple syrup (depending on how sweet you want them)
-A griddle

Personally, I only make these on the griddle because:

1 You don’t need oil
2 The pancakes are fluffier and turn out better
3 You have more room to cook multiple pancakes at once

First, I take the oats and blend them at high speed in to a flour. I then add in my banana, nut milk, and maple syrup, and blend them together. While I am doing this, I create 2 flax eggs by taking 2 tablespoons of ground flax seed and 4 tablespoons of water. I stir the two ingredients together in a bowl and let it sit to thicken until it forms an egg-like consistency. Next, I pour the pancake batter in to a medium sized bowl and add in the flax egg and stir (do not blend). If I am ever feeling like I want some super sweet pancakes I will add in some extra maple syrup.
After all the ingredients are mixed together and the batter is formed, I then heat my griddle up to about medium heat and let it stay heated for about 3 minutes. I then pour the mixed batter on to the griddle. I make each pancake about 2 ½ inches in diameter because they will expand a little once heated, and the batter is too thin to make them any larger without falling apart. I pour about three at a time and wait until they start to bubble up on one side. When this happens, I flip each pancake over and heat until the other side is a golden brown. Once the first set of pancakes are finished I transfer them to a plate where I stack a few slices of banana between each pancake and begin stacking. I then add in the remaining of the batter on to the griddle to cook. Once all my banana pancakes are cooked and ready, I then go crazy with the toppings.
I… love… toppings… you guys. I am the topping queen. I want every possible treat there is to add on top of my stack of hot cakes because go hard or go home right? For my pancake toppings I used:

-mixed berries
-cacao nibs
-peanut butter
-hemp hearts
-a little love

You can top these bad boys with whatever you like but personally, this is the best combination. I may be a little biased but I eat these things more than the average person I feel like and they never cease to disappoint. These pancakes are SO GOOD you guys, and there is enough to share (if you must), but I can inhale an entire stack in one sitting if we are being honest up in here.
You know what pairs even better with these? The one… the only…the light of my mornings… the warm cup of love I look forward to sipping on in the early hours of the morning… my wonderful matcha latte. This is also super easy to make and SO DELICIOUS.
To create this all you need is:

-1 packet of U-Matcha brand matcha powder
-1 cup of cashew milk (Forager vanilla cashew milk is my favorite)
-1 tsp of maca powder (optional/ helps balance hormones and also gives you an extra kick of energy)
-1 tbsp of maple syrup (for added sweetness)

All you have to do is add all of these ingredients to your nearest blender and blend it right up! Then you can pour it in to a stove top pan and heat it up to your liking! I have a Vitamix blender so I like to blend mine on high speed until warm and it makes my latte all warm and frothy and just absolutely to die for. This quick recipe will leave you with a nice warm latte and a delicious stack of pancakes to enjoy. I don’t think you could ask for a better breakfast, or an easier one!
